When in Rome do as the romans do or better to say when in Herzegovina eat as the herzegovinian eat. Bosnian and herzegovinian cuisine has its roots in Mediteranean, Turkish and Greek cuisine. On the other hand, our mothers gave their special touch to the dishes using local spices. During the time of poverty, wars and dryness local people cooked that wath they had. It wasn't much and you wouldn't expect it to be tasty. But using the imagination and an uniqe procedure of preparing meals they created specialities that are nowdays offered in fancy restaurants. We can descover only one secret ingredient of our cuisine. That would be... time! The food has always been prepared slowly and with lots of love; love for cooking and love for those for whom the meal is prepared.
